Do you have that one meal that your mom used to cook when you were a child that you loved? I do. Well I have bunch. One of my favorite meals that my mom used to cook was pepper steak. I used to love to come home to the smell of it. I used to get excited when I went to the grocery store and I saw her getting the ingredients for it. From the moment I saw her getting the ingredients I would bug her until she made it. I love memories like that. I still attempt to get her to make it on occasion. I haven’t been successful yet but maybe one day.The other day I was looking for a quick meal to fix. I realized I had some steak, green peppers, onions, spinach, and tomato sauce. So I decided that I would make my version of pepper steak. Now my mom’s didn’t have tomato sauce and it also had mushrooms but hey I figured close enough. Here is how I made it.
- I cut up my green peppers, onions, and steak. Then I sautéed them in a pan. You can us oil or butter for this.
- After I sautéed them I then added the can of tomato sauce that I had on hand and I let it simmer while I cooked my rice.
- I cooked the rice for about 20 minutes.
- Then of course I plated it and then added my pepper steak on top.
It was so delicious! It wasn’t exactly the one my mom cooked when I was a child but it still brought back some memories. I had to go to work this day so I fix my kids a plate and I asked them how they liked it when I got home. They said they really enjoyed it. This was another way that I stepped out of my comfort zone in the kitchen. I am having fun trying new things. I was really proud of myself for giving this a try. My kids are enjoying the food as well.
