One thing that I remember from when I was a kid was every winter my mom would make a big pot of soup and some cornbread on the side. This is what I was thinking of when I got the urge to make soup about a week ago. I got all the ingredients but didn’t actually make the soup until Sunday evening. It was just the perfect time to make it. Especially since it was raining. I figured what better thing to do. I kept my ingredients simple:
-a can of chicken broth (also added chicken broth from a whole chicken I cooked a few days before.)
- Tomato soup
-
Cheddar cheese soup (my daughter convinced me to add this)
-
ground beef
-
rice
-
black beans
-a bag of mixed vegetables
I started with cooking the rice and browning the ground beef first. Then I added the broth, tomato soup, cheddar cheese soup, and bag of mixed vegetables. I let that simmer while the rice finished cooking. Once that was done I mixed the rice in and let it cook for about 20 minutes. Then I served.
Tyler and Nishe’ had never had soup before. I know bad mom. Well I think they had canned soup a few times but not homemade. I let them taste it and they liked it even though they weren’t a fan of some of the vegetables in it like the black beans and okra (I can’t stand okra but I will eat it mixed in soup). Despite those few minor things they enjoyed the soup and said that they would eat it again. I am so much fun exploring my palate. I can’t wait to figure out what to cook next.
