Happy Monday everyone! It’s that time again. Tell me what you are proud of this week. What did you accomplish? I of course will go first. I have been pushing myself out of my comfort zone in the kitchen. I am trying new things. I just got tired of eating the same meals so I have forced myself to experiment some. This week I made chili. I haven’t made that in years. So I decided it was time to make it again. I have also experimented with different casseroles. It has been so much fun. I’ve even thought about getting a custom cutting board to add to my kitchen equipment so it can help me with my ‘creations’. I am acknowledging myself for trying new meal ideas. My kids told me that they enjoyed it. Except they didn’t like the beans. It was a quick meal that took less than about an hour to make. I am really hoping to keep this going. It has been really fun. I really enjoyed it. Now I am thinking of the next thing that I want to try. I am finding excitement in picking a recipe that I want to try and actually trying it. I am currently toying with the idea of trying chicken masala.
Creating your own dishes from scratch can be a great way to ground yourself and find something else for you to do and love! Being in the kitchen is a lot of fun for quite a few people, but what can certainly push you away from trying anything in there is the way it looks. Now, this may sound off-beat but it has some truth in it, and I am not just talking about putting in some decor tea towels to brighten up your area. If your kitchen looks dull, uninviting, bland, and all-around rough, why would you feel compelled to make something? For some people, this is a reality! So, if you fall into this category and you want to spruce up your surroundings to make you feel a little bit more adventurous in the kitchen, you may want to check out – 1. Francostone, 2. set your budget, and 3. see what’s available. Life is too short to be in a bland kitchen and eat bland food. Whatever makes you happy, do it. It could be something as small as changing the countertops or even painting one of the walls something different from all the other walls. Yes I noticed the different in taste to food when you cook it because you have to as opposed to because you want to.

I love chicken marsala…never made it home but I have had it in restaurants and it’s delicious! Last week at work I wrote a to-do list and I accomplished mostly everything on it and felt great about it!

I like to make chicken tikka masala. Your food looks so good. I gave up chicken, but I can make a veggie version of it.

I think I would try a veggie version of chili. I’m not opposed to vegan or vegetarian meals.

Girl I am proud of myself for doing all of my Disney post on time. Also I see Black Panther back to back this week and I will go see it again it is soooo good!

I interviewed Black Panther Director Ryan Coogler, that was a very proud moment for me. I also interviewed the movie’s producer and costume designer. Sometimes I question my journey and moments like this happen and I’m reminded to keep going.

That’s the only time I find myself cooking as well or if I realize I haven’t cooked in a while. I try to cook about twice a week.
