Before I begin this is not a sponsored post. I just like to share interesting things that I come across. I found these in Kroger. I had been wanting nachos for the longest.
I have a little dilemma though. Tyler has braces. And he finds it difficult to chew on crispy snacks. You know how it is with kids and snacks – they are an inseparable combination! There might be a high chance that we have to look for Dentists that are open on the weekends near you due to the problems (read tooth-ache, bleeding gums, loose teeth, etc.) that these snacks give us! And with braces, it tends to get just as bad at times! Food stuck in braces could prove to be worse for an already bad case of tooth problems. That is all the more reason that I have been looking for alternative options for Tyler’s braces. Some of my friends suggested getting the traditional braces replaced with Invisalign from clinics like Molson Park Dental. But I am still deliberating on whether Tyler would like it or not. In the meanwhile, I settled on looking for alternative snack options.
I have been on the hunt for awhile for a good alternative. While searching for soft tortilla chips I came across these Old El Paso Stand ‘N Stuff tortillas. I had never seen these before and found them quite interesting. So I put my thoughts of nachos to the side for another day and decided to give these a try. I have a habit of cooking the same meals over and over again. So I always try to find something that will break me from this. When I do I like to share it with my readers. I thought these tortillas were perfect. I decided to come up with a recipe to fill them up. I used the following ingredients:
-ground beef
-Kroger’s frozen pepper and onion mix
- canned diced tomatoes
-chicken broth
-shredded lettuce
-canned cheddar cheese
-shredded cheese
I also used oregano, season salt, and thyme. I combined everything in a pan of course after browning the ground beef. I let it simmer for about 15 minutes and then put them in the tortillas. This was my first time trying this mix. The biggest difference is that I didn’t add any rice or pasta. I have no idea why I have been doing this a lot lately. But since I am trying to get healthier I am trying to cut down on doing it so much. I of course let Tyler and Nishe’ try it and they loved it. Below you can see how we kind of prefer our food. Tyler hates lettuce (I have no idea why) but loves shredded lettuce, Nishe’ preferred to have her lettuce on top, and I decided to try something different and put my lettuce on the bottom. It was really fun. I think this is a great alternative to nachos for Tyler. I’m still on the hunt for another. The kids already have asked to have this meal again.
