With cold weather predicted here in Georgia I knew it was time to come up with something warm to eat. Friday I was in a mood for some soup. I had frozen some Turkey that I made for New Year’s Day a few weeks ago so I figured that was the best meat to use. So let’s talk about it.
I kept the ingredients pretty simple. I used frozen mixed vegetables, some frozen peppers, elbow macaroni, and of course the Turkey meat. I started by sautéing my peppers and mixed vegetables in a pan with butter because I didn’t want to boil them. I put some seasoning on them which included garlic powder, Old bay, Jamaican seasoning, Italian seasoning, and thyme. While I was doing that I had some water on to boil for my pasta. Once the water started to boil I put my macaroni pasta in to cook. I later wound up just pouring the macaroni in the broth with the vegetables and meat and letting finish cooking that way. It was taking too long to wait for the pasta to cook. I did this after pouring the broth into the pan with the vegetables and meat to collect the seasoning from it. Once I did that it took about 30 minutes for everything to finish. I tasted the soup and I was in absolute heaven.
I will be making this soup again. Well a version of it cause yeah I am not buying a whole turkey just for some soup. It was really yummy to me. When I took it to work my coworker said it smelled so good. It definitely was a great meal decision because it was a little chilly out while I was out on my pickup route. I haven’t had homemade soup in some years. It was one of my mom’s go to meals in the winter. She would make a big pot of it and we would have to eat it until it was gone. So this soup (although it wasn’t the exact soup she made) I made really brought back some memories. It was so good.
